HTPC PVR Clueless

I want to put the whole PVR thing into a new system I'm about to build, but I've never dealt with a tuner card and I don't understand how they work. The PC will be in my living room connected to both a monitor and my HD LCD tv. I have a HD cable box, however there aren't too many channels available from my cable company and if recording in HD requires you to be an engineer I can live without it.

A few things I want to know:
Is the tuner card connected to the main cable wire or do you run it throught the cable box?
Can you record 2 channels at once?
Will I always have to watch tv with my computer on or will i still be able to watch the old fashion way?

I understand that some of these answers will vary from tuner card to card, but I was thinking about a Hauppauge. Is that a decent card?
