what is the best way/software to convert MKV files to a 5.1 DVD?

but i dont know why you would even bother to get MKV(720p+) files if you're just gonna convert it into DVD(480p.)
why not just get DVD files instead of MKV files.
just a thought.

thanx. that's because i download episodes from tv in MKV. there are no dvds (yet).
