Format Suggestions for DVD Replacement

I've been using a combination of AnyDVD, DVD Shrink and TMPGEnc to convert my DVDs to WMV files with 5.1 audio which I then stream to my XBox 360. However, this method results in a poor copy of the DVD.

Sure, the movie itself is fine, but the DVD is more than just a single video / audio stream.

You can probably see where I'm going with this... I would like a file with all the audio & subtitles from the DVD which I can play on my XBox. I'm willing to use a third party media server (such as TVersity) if it will work, but I prefer to use as few tools as possible.

I tried the method mentioned in this thread (http://forums.afterdawn.com/thread_view.cfm/608979), but there were two problems:
1) The files wouldn't play on my XBox, though they would on the PC.
2) I was unable to select different audio tracks or subtitles.

Anyway, does anyone have a suggestion for the format I should use to accomplish my goal?

By the way, I'm running Windows Vista Ultimate x64, with a C2D 2.4gHz, 3GB RAM and ~1.4 GB of HDD space.
