backup not replacing old backup - filling our HD!!

Hello
we are using Back It Up 2 Essentials
I have it set to replace existing files but every night it does a back up it creates another new folder.
this is on to our removable HD and each backup is 15G so it doesn?t take long to fill our HD.
Can anyone help please? I must have it set wrong.

Also
does anyone know if when we remove the HD at the end of each week whether we have to reboot the server when we slot it back in or not? when we slot it back in it doesn?t show so I assume we need to
