copy 2 DVD-9 to 3 DVD-R

Hi there,
I would like to make a backup of the SpecExEd of LOTR. the main movie is on two DVDs. Now I could rip them and split them to 2 time 2DVD´s, but after some cleaning I found that there is only 12 Gigs of Data for the main movie. This would perfectly fit on 3 DVD-R. Now, obviously this will need some reauthoring of the VOBs, and IFO Files. Can anybody give me a hint how to do this?`
