How do I make a text dump of a game?

Hello!

I've always been wondering how do people build their game script guides on gamefaqs or game fansites. Isn't it tough going through the game, writing each sentence down while playing? There's got to be an easier way, because all of that text is written down in the code of the game and somebody just has to extract it, am I right? I want to do this with the Japanese version of final fantasy X but I have no idea how to do it. If anybody has experience with this sort of thing, help would be truly appreciated :)
