Ummm wow.... thats like almost perfect in terms of quality. I would just try to find some better ram, the ram you chose only has 4 reviews and most are bad. All else I can say is "possibly" upgrade you psu but 400w handles what you have now. I would just feel more safe with like a 550w. But even if you dont change anything its a still Great build.

Case: Excellent, I own one. Fantastic cooling without ridiculous noise.
HDD: Good choice, if 640GB is all you need, that's a fine drive for the job.
GPU: Great value, but why the vast case with only midrange components?
PSU: A great unit, but for an i7, that's cutting it a bit fine. if you're sticking with the midrange graphics card, this will suffice http://www.newegg.com/Product/Product.aspx?Item=N82E16817151056
Motherboard: A good board. In the absence of the UD4 at newegg, that will have to do.
CPU: The only i7 to have for anyone in their right mind.
RAM: Fine choice.
As for a CPU cooler, the Prolimatech Megahalems is no better than the old market leader, the Ultra 120 Extreme. It is however slightly cheaper at most sites.

Acer screens seem to be very reliable...I have had 4 for over a year, and not one bad pixel.

I'd also second the Acer monitor. They're not top flight but they are good value for the money. Currently using an Acer 22" and very satisfied.
AMD Phenom II X6 1100T 4GHz(20 x 200) 1.5v 3000NB 2000HT, Corsair Hydro H110 w/ 4 x 140mm 1500RPM fans Push/Pull, Gigabyte GA-990FXA-UD5, 8GB(2 x 4GB) G.Skill RipJaws DDR3-1600 @ 1600MHz CL9 1.55v, Gigabyte GTX760 OC 4GB(1170/1700), Corsair 750HX

If you're going to upgrade later then you should wait until July/August when the next generation cards are released. There could well be a 5870X2 (or similar) in the next few months.
As for a PSu to run a dual card, I'd go with this unit: http://www.newegg.com/Product/Product.aspx?Item=N82E16817139010
You can crossfire a 4870 with a 4870X2, but you will not be able to crossfire a 4870 with a next generation card. You may as well either go all out now by buying a 4870X2 or even a 4870 and a 4870X2, or get something cheap like the HD4850 and wait until the next gen stuff comes out then spend the extra money there.
The EX58-UD4 doesn't seem to be available in the US at all. It's a cheaper alternative here in the UK by a substantial amount (22%) and all it's missing is the third PCIe 16x slot.
The RAM you chose is actually much better than knucklez', but doesn't have a proven track record yet. The Corsair is good value, solid, reliable stuff. Technologically, the G-Skill is much better, higher speed, better response, better cooled, but in practice I don't have much evidence of how well it performs. It's G-Skill, it should be pretty good.
Acer use decent quality panels, but the screens themselves leave a little to be desired in terms of quality. For low-midrange monitors I'd say LG, Samsung and Viewsonic. For higher grade stuff, Samsung and Dell.
