I would like to back up my copies of Curb your Enthusiam but they are already so compressed that I don't want to use Pinnacle Instant Copy to do the whole movie, each disc has 6 half hour episodes on it. If I wanted to just back up 4 of the VOB files per DVD-R what would be my best course of action?

I assume that these copies are encrypted, commercial DVD-9s, and not copies you made with a DVD recorder.
If they are recordings you made, then the copies you have are DVD-5s and removing things won't change the compression of the finished product.

The simplest way I can think of is to just open the disc in DVD Shrink, let it analyze the original and then select Re-author. Next, look at the way the movie is presented. Does each episode correspond to a separate title? If so, drag the titles you want into the compilation window. Once that is done you can backup the results to your hard drive or use Shrink's burning feature if you have Nero or DVD Decrypter installed.
If your movie episodes are not separate titles, but one large main title, do the same thing, dragging the main title into the compilation window. Once it is there, use the start/end feature to trim off the episodes you don't want.

Shrink is a good one. But in reauthor mode you will loose menus.

Check DvdReMake out. It does not do dvd ripping and burning, but is very flexible manipulating disk content (no transcoding though)
