Compressing two DVDs onto One

I wonder if anyone can give me some help or point me in the right direction about my question.

My situation is that I have two DVD-Rs which I would like to compress onto one.

The two disks contain episodes (one per disk) from a TV series which were transfered from VHS onto DVD-R disks.

For each of the two DVD-Rs I have copied the files onto my hard drive so that I have two sets of VIDEO_RM and VIDEO_TS files containing all corresponding files.

I want to somehow compress the two episodes onto one disk and amend the menu screen so that it reflects that there are two episodes on the one disk.

Is there anyone who has done this, or knows of a writen guide/tutorial on the net that explains how to do this? Also can anyone tell me what software I would need to do this?
