DVDXCopyPlatinum in the advanced selection gives the option of compressing or splitting. When splitting the menus and trailers go to both discs. This is probably the easiest as it does everything automtically when you make the right selections. The 4.0.3.8 and later versions come with a manual in PDF format if one needs a guide. Note: Check on availability and activation for your area. This is the program banned by US court.

I have a splitting guide for episodic DVD's if you have DVDRemake
http://www.deano.dsl.pipex.com/dvdremake/dvdremake.htm

but you can use DVDShrink if you blank out the episodes you don't want using a black image. In most cases you should be able to do it with No Compression ;)

one downside is that if you select an episode that has been removed you will just see a black screen :(

Vobblanker is another free tool you could use to blank out unwanted episodes

:edit: lol, I keep forgetting about DVDStripper & Menumodder being able to split DVD's
