How to customize previously ripped flick

I rented a few DVD-9 movies and ripped them before I had a chance to download DVD shrink. I used DVD decrypter in File mode to rip. I want to keep menu and scene selection because the are animated and cool, but wanted to get rid of all extras, deleted scence, etc. I have the guides on how to go about ripping and buning from the disc, but if I already have it on HD how do I go about it?

I went to open files and imported it from the folder i put eveything in. What do I do from there?

ALso, what is the lowest percentage recomended before the DVD begins to degrade quality on the copy?

The only way to keep the menus is to do full disc. But you'll also have to keep the extras. The movie will probably be compressed a ton is you do a full disc backup. Personally I like to keep the quality as high as possible so the menus, extras, subtitles, and 2 channel sound go.
