I've been trying to figure out if there is any advantage to using either a DVD-R or DVD+R. I'm assuming the only diffence is +R lets you change recording spped right? Will all dvd players still play a DVD+R?

If the burner is compatible with both formats, there is no difference. If the software allows for speed settings, it doesn't matter if the media is + or -. Now days there are few players that will play one format and not the other. So, compatibility isn't much of an issue.
