2 channeled audio (OGM to DVD)

Alright, I have an OGM video file. it has 2 audio's, and subtitles.

I already know i'm going to have to rip out the streams to the OGM and convert them so they'll work. . but

How do I go about making a DVD where I can I choose what language I want, and have the ability to turn off and on subtitles (I know it's possible, you get those options on most store bought DVD's)

Here are the programs I use for my DVD authoring. . "TmpgEnc 3.0" and "DVD Author 1.6"
