How do I maintain quality when going from VHS to DVD

Hello, this is my first post and I am having a very difficult time maintaining quality going from VHS to DVD. I am currently using the software that came with my card, it is called ULEAD DVD Movie Factory 3SE and I am just not happy with it.

I own a Hauppauge PVR250 and am capturing through Compostie Cables from a VCR. I have alot of videos to transfer to DVD and most of them are about 3 Hours. I have tried using the Long Play Setting and did not liek the quality. I also tried using other applications to capture but none of them work. I tried altering the video settings with NERO and still did not like the quality.

My computer is the following:
Athlon 64 3400+
2 GB PC3200
80 GB HDD
Optorite DVD+-RW Drive
GeForce 6800 GT
Hauppauge PVR250

If anybody could point me in the right direction of how to maintain quality I would appreciate it alot. I have heard about using this encoder called HuffyUV but I have no idea what an encoder is or how to use it.

I know this is probably pretty simple but I am pretty new to this stuff. Any advice or tips to get better quality would be greatly appreciated.
