I made a back up for the game Roland Garros but when it loads the screen jumps like crazy. Does anyone know whats going on?

Yes...the chances are that its a PAL or non NTSC release assuming you have a NTSC PS2. The PAL people (Europe) have a different TV frequency of like 85hz and us at 65hz.

If you are using swap magic, change the Video setting to PAL.
