it depends on what you you want your DVD's to work on...
DVD-R will play in 98% of all DVD players
DVD+R will play in 90% of all DVD players

Here's some tecnical stuff on the two formats. http://www.cdfreaks.com/article/113 I prefer the +r format primarily because I booktype them dvd-rom for best chance of compatability with set-top players.
