[Never used dvd burners. Shopping for external dvd burner w/firewire. Seems like most of what is out there is dual layer.]
Q: If for whatever reason I need to record a single layer dvd, will double/dual layer burner let me?

Sure............. you can still burn a single layer disc, with a double layer burner. It's really determined by which blank media you put in the burner, and how you setup the software. DL discs are still kinda expensive, so you'll probably use a DL blank, only occaisionally. But it's nice to have the ability, when it's needed, so a double layer burner, is definately the way to go. They may not even make single layer burners anymore. Not sure though. Enjoy!
Good luck!

BTW...........
USB 2.0 is faster than firewire. :o)

Never heard of the software you mentioned, so I don't know how good it is. Maybe someone else here knows about it.
Most folks use DVD Shrink and/or DVD Decrypter, to backup commercial dvds. Now days, with the new copy protections on the newer movies, you'll need AnyDVD also. It runs in the background, and bypasses the new copy protections. It has a 21 day free trial period, and then costs $39. Best $39 I've spent, in years!
Good luck!
