I know the title is a little vague but I wasn't sure what to say. I'm looking for any programs that can rip or get access to the audio and/or video within games. I have found one possible product but even it has had little if any success.

There's not just one program to do that, all games use their own kind of video and audio, so the programs are always case sensitive. Hardly any game has a/v that is directly playable. Only psp games use the same format on videos (.pmf, playstation media format).

It seems as if most current games compress their files in .cab archives. WinRAR should work.

When evolution selects its agents, it does so at a cost, makes demands in exchange for singularity, and you may be asked to do something against your very nature. This force, evolution, is not sentimental. Like the Earth itself, it knows only the hard facts of life's struggle with death. All you can do is hope and trust that when you have served its needs faithfully, there may still remain some glimmer of the life you once knew.

Well yeah, the install files, but we're talking about a/v here.

That isn't true. Doom 3 (after installation) is nothing but .cab files.

Actually, it's most recent games. (ie, made with the Doom3 physics/graphics engine)

Well there is a program called Dragon UnPacker that can look for different file formats within others that are not very well known but so far I've had little success with it being accurate(as in it usually brings up files in for example .mov format but they're not working files.). I've heard of another that can get things like sound that are otherwise inaccessible within cds in general (as opposed to just games) but I can't remember the name of it). Most files I've found aren't full of .cab files unfortunately and even then what is inside these files, more obscure file formats or more easily recognised ones, for Doom 3 I mean?
