Need to erase a hand full of CD-r's. What is the best software to use and how easy is it to operate? I'm needing to erase audio CD's to reuse as audio CD's. Will the quality be the same?

You cannot erase cd-r's. Once data is written onto them they stay there permanantely. Only CD-RW disc can be erased.

Can I record over them? If I do record over them isn't the original
recording in the way?

No, you cannot record over them. Once the data is written to a cd-r it cannot be erased and other data cannot be added to it.

That means you can't use them again. You cannot record over them or change what you have already burnt onto them. If the disk isn't full you can usually add more to it.

If you want to use the media more than once use CD RW.
