What exactly is this audio?

Also, I really only want English audio, but there are multiple ones...so which one(s) do I keep?

Best to keep AC3 6 Channel (5.1), you will still have sound even if you don't have a home theatre setup.

Caution...you might end up with director's comments if you keep only the 2 channel.

You can check the audio stream in the preview window. Just right click the window while the movie is playing and choose a different audio stream. I would keep the 5.1 Dolby even if you don't have a home theater system, like mackdl said, you will still get sound, and have 5.1 on the DVD if you get a home theater system in the future.
