Hi,
I have no luck backing up my Swords of Destiny so far. The backup copy is always black and white. Any input would be appreciated.

you need to patch the game (NTSC->PAL or vice versa)

Search the PS2 DVD forums for PAL2NTSC patcher, or ADR Patcher, there's links been posted there umpteen times for this type of software. Or Google them.
