I downloaded a couple of DVD-Rips all averaging 800mb, so really speaking, I should be able to put 5 of them onto a DVD-5.

But I remember when I used convertXtoDVD for one video file before it turned it from 800MB to filling the DVD-R (4300MB) and when I went to copy it for a friend it showed that it was a full DVD-R and it took 10 minutes!

So will 5 x 800MB video files fit onto a DVD-R?

Will the quality drop?

They will if you burn them as data in AVI form, but once you convert them to MPEG-2 you will have, like you said, a 4 gig file which will fill the blank.
