Hi culloa
Since Shrink is no longer updated it can no longer handle the newer copy protections like the one used on Cars. It needs some help.
This is one of the errors it will give when that happens.
So here are some options for you.
Use RipIt4Me (all free). Here's a step by step guide w/ links to download.
Or rip 1st w/ DVDFab Decrypter then open those files in Shrink.
Or run AnyDVD in the background w/ Shrink. Not free but has a 21 day free trial.

Open DVD Shrink and select open files and browse to where you ripped the movie click on the folder and Shrink will take over.

@culloa
Burn the video_ts by using the 'open files' option in the tool bar of Shrink. You'll be able to find them then.
Sounds like you are using the 'open disc image' option.

a-ha. always check for updates, either once a week or certainly as soon as you hit problems...
