Stripping ISO's

If you have an ISO that contains more then one language, i.e. English plus other European languages, is there any problems with stripping out the unwanted languages and recompiling the ISO to shrink it down some?

Is it ok to just delete the relevant language files or do they need to be dummy'ed??
