ive just bought my son a psp off a friend which is official sony 3.03firmware ive got easy downgrader and gta liberty city with a 2.00 update but whats unpatched

You have it the "patched" version has 2.60 update. What they mean buy unpatched is that the version you have (2.00 update) had a back door left open in it. After Rockstar or Sony figured it out the game was re-released as the patched(fixed) 2.60 version. Kinda like hot coffee.

so if i use the easy downgrader with the gta in i can downgrade successfully
