Does it matter which one I choose? Will the ULTRA help me with loading times of games? Or does it only matter for transferring games?

ULTRA or not will make no difference in loading games, while transfering files across there will be a difference (but only with large files like games).

If you use a USB cable to transfer then it probably won't matter, as i'd recon both of them are faster than the data speeds through a USB port.
