If I am softmodding using the Mechassault method, are there any risks? like, say, bricking my xbox?

Risks are minimal IF you use some sense.. Don't go deleting ANY files you are unsure of.. especially in E:/dash .. and also applies for C:/
never go to the "live" screens on any games, they have a way to update dash files.. and always.. ALWAYS transfer your eeprom backup files, and the entire contents of C:/ and E:/dashboard.. or E:/backup to your pc.. I CANNOT STRESS THAT ENOUGH.. get those backups safe.. burn them on a once only cd and put them away safe and secure. It will save a lot of headaches and stress if anything ever goes wrong.

the risks are very low just make sure you know what exactly you have to do before you try to mod
