Could you put another Eboot.PBP in your *:\PSP\GAME\UPDATE and downgrade/upgrade it manually like that?

If your talking about official firmware then no. You can not put a 1.50 EBOOT in the update folder and downgrade. If it was that easy then there would be no downgraders/exploits needed.

Even if your on custom firmware it isn't that easy to downgrade back to a lower firmware. If you have an OE or M33 CFW installed then it is as simple as downloading a recovery folder and downgrade via recovery menu.
