I remember a guy were I use to work that ran firefox from his thumb drive at work so the company wouldn't have a record of the websites he visited, anyone know how to do this?

Try PortableApps, it will install and run off your flash drive. It will leave no personal information behind on the machine. Here is a description for the Firefox plugin.

Just remember there is always going to be a way to monitor the employees activity...
