When u exit a game and it says Please wait, and freezes there and u hear 3 Beeps and the PS3 restarts????

I think that's happened to me ONE time. It's not like it's a fatal error trying to say your PS3 is about to destruct or anything! :P

Had the same error before i download Assasins Creed update.
After the update all seams working normal.
It is probably the software that makes this issues.(Ubi$oft)

Yeah, I highly doubt it's got anything to do with your hardware.. Just mistakes made by the makers of the games or firmware bugs.
