ok ya can use the "Custom Firmware Extender" Plugin in conjunction with "remotejoy" to record video. look in the readme but if ya need more help just ask.

Edit: Just did a bit more searching and I found an easier way. The plugin SVC capture allows you to take gif animations of your games and xmb. Just followinstructions off and download off this website.

Actually you can by using SVC Video Capture...
It will make a .gif file on whatever is on your PSP Screen....
