What is the difference between JTAG and DB9F

I have recently aquired a Eurovox 2007 which I am having problems with (being dealt with in another thread).

I am very experienced with PC and network hardware and the process of flashing, but one thing confuses me about the Eurovox. When the 'software' is loaded via the serial connection is this considered flashing or can the memory only be flashed via a JTAG. What are the functions that are provided by the 'software' that is loaded via the serial cable and that that is loaded via a JTAG?

You update the EV firmware with the DB9F Null Modem Cable and you use the JTAG to recover a dead b0x back to life
