Most of the classic games with emulators you see around are emulaor packs. Theres one NES pack with over 2000 games on it, all on one image. So yes, you can put more than one on a disk.
If, however, you ment the virtual console wad files, those are not played from DVDs. Instead you use the twilight hack to install them directly to the wii's internal memory.
Well its not quite that easy for the N64 ones. Configuring the emulator is somewhat tricky from what I understand and you have to use the trucha disk signer to make the disk work on the wii (though if you do some searching on torrent sites you can find pre-built disks of rom collections. I cant link directly to them so you'll have to find them on your own) But the N64 emulator only works with a handful of games. The NES and SNES emulators are a bit simpler to use and have better compatability but savegame managment is tricky (saves arent really saved unless you enter a specific key combonation before turning the system off) And to top it off all the emulators run only in gamecube mode so you need a gamecube controller and memory card to play them.
Having played with the emulators and the new wad loader, I have to say that just using the wad loader to hack the games into the virtual console is way easier. Of course then your limited to the games that have been released to the virtual console, but at least they're easier to use.
