So I copy 360 games and get an .ISO and a .DVD file. If I were to delete the ISO file (to save space) would the DVD file still work if I were to decide to use it another day?

No, think about it man, the dvd file is like 1 KB, how can you burn that to a disk, if you delete the 7.5 GB ISO??? You can't delete the ISO.

burn the isos to 2 dvd5s. That way you can still reburn the game if anything happens.

I bought a 500 GB external drive, and just save my favorite game isos on there. They are cheaper now, worth it.

yea just burn and delete if you are worried about hard drive space, or get a bigger hard drive. with some binary reporting groups they have a 100 day retition so you can still redownload them within that time frame if you are using newsgroups with an unlimited account.
