I have searched the internet and forum but can't find the answer to this.

Q - Is there anyway by looking at the box or the back of the WII to tell when it was manufactured.

I am looking at buying a second hand one from a game shop in the UK and want to know how old the consol is.

Get the serial number and use it in serial number tracked, that will tell you which chipset is most likely inside which will give you a clue as to how old it is.
