if he dont know what firmware is on the xbox you bought from him than he didnt flash it, he bought it from someone else that flashed it and chances are you are paying way too much for him to be a middle man.
point is, in ordre to flash a xbox you have to download the modded firmware from a site, save the file to the pc, then open the downloaded file in the program needed to flash the system, so if he flashed it he would know what firmware he flashed it with.
if you realy need to know what firmware is on it flash it again yourself(it very easy ive done over three hundred) with the firmware you want.
as far as the hitachi drive, there is no problem on flashing them or them playing backups, i have a hitachi 79 drive in one of my own systems and it works great.
all the hitachi drive can be flashed now, the onle drive you cant flash is the lite-on, it has to be replaced with a different drive.
