All this information can be found under the Ultimate Sticky Thread.
There are a few ways to backup games listed there. They also include guides on how to do it.

I own 2 of the LG drives, so that what I use. You cannot back up the games without one of the "special drives".
It takes almost 5 hours per game.
Any burner will work once you have a working .iso
You cannot back up Wii disks with a "standard" DVD drive.
There are also methods using SD cards and wireless, but since I have the special drives . . . . .

I use Wiihttpd Dumper. I got a usb nic and the speed isn't too bad (still usb 1.1 though). Backups take 2 hours to complete. I've heard people complain about this time, but think, it takes me 10 minutes to backup a standard dvd, 1 hour vs 2 hours isn't a huge difference from this perspective.

I also use wiihttpd or Wii DVD Dumper, both work over the network and will backup a disk in ~2-3 hrs. I just started and let it go, it's not like I'm constantly on my system, and it is faster than trying to download it from a torrent that may or may not be working...
