I'm using Ritek, but I don't think just using Verbatims will help me much. Is there anything else you guys can see in here that would define the error I'm getting.

. Thats a Memorex disc, not the best of brands to burn dual layers with. Not saying that they don't work, I have backed up quite a few with them, but their no Verbatims. Also try updating the drivers for that burner, I looked on TSSTCorp and didn't see that drive on their site, so maybe you have bad drivers? First I would try a new disc, maybe another Memorex, but I would go with Verbatims, there is a sale at Sams Club for a 50 pack for 60 dollars. Its a steal. So try that, if not reload the drivers for the drive.
Don't think that's the problem, Ritek is a pretty good all-round dye. It wouldn't cause burn issues, just read issues. Vertabims are best for 360's to read though.

DO NOT GET DOUBLE LAYER!!! you need specifically DUAL layer, when i first started i bought a pack of double layers and quikly realized there completely different than dual layer, they will not work at all for 360 games.
