You have a few options...

1) update with the disc.

2) Update with WiFi.

3) Make a backup of the game and WiiBrickBlock it.

4) Install Starfall which blocks game disc updates from being performed on the system.

5) Keep using Gecko OS since it blocks game disc updates from being performed on the system.
