Easiest way to softmod is the only way to softmod. You have to flash your drive. Now, for the different drives there are different ways you have to do it. Just search for the particular methods for your drive.
You can search for ways to tell what drive you have, there are pictures showing you how to tell by just taking your faceplate off.
Everyone has their own preferred method for flashing drives, main methods being JungleFlasher and Iprep.
Here are the different drives:
Hitachi(different ROM versions, you have to take your xbox apart to find out what version you have, and search for a tutorial accordingly)
Most people prefer JungleFlasher for this, I use Firmware Toolbox for Hitachis
Samsung, again, different Rom Versions, slightly different methods. I use JungleFlasher for these.
BenQ - Easiest drive to flash in my book, and I like Iprep for this drive, uses DosFlash and is a sinch to flash. Also, it has a nifty little feature that if you have a bad flash, you can do a bad flash recovery and fix it, not bricking your drive.
Lite-On - Hardest to flash only because of the method you have to unlock. Also, need a special tool to unlock that you can either make(search around for how) or buy. Once unlocked pretty simple.
Just search around for how to find out what drives you have. There are plenty of Tuts on here and other forums. Read more than one and make sure you have a good understanding of what your doing and the risks involved.
And no, there is no way to play backups off of the HDD without the dvd. After you burn the game you can copy it to your HDD but you still need to have the disk in the drive to play it. The benefit to this is less wear on your laser, quieter operation(ever notice how loud the drive can get?) and quicker load times. But you have to have the disc in the drive at all times.

I personally think the NXE doesn't only check for the security sector when trying to play the game from the harddrive, but also for the DVD structure or something. Again, that's only my personal guess, but that's what I would make it do to prevent hackers from letting the games boot without DVD.
Xbox 360: Slim untouched with a faked 320 GB harddrive for XBL, phat with LT 3.0, played Halo early, so going on live would be an instand ban, also with a faked 320 GB harddrive
PS3: Untouched 160 GB Slim, 60 GB Fat with latest Rogero and 160 GB internal harddrive.
PSVita: hardly ever play it
GameCube: Black with a Viper chip installed. With gameboy player. Trying to get a Wavebird controller.
