Is there any other way to flash the DG16D2S's firmware WITHOUT the CK3 Probe using JungleFlasher?

yes, you can make your own, or buy a alternate brand.

It needs a probe though.

I made my own, similar to that. I recommend putting it into a project box and only having the wires you need hanging out, however.

Also, instead of an alligator clip, I used a female molex power connector to lead to a 5 volt PC power supply source.

You can use anything you want instead of the spring. Anything that's metal. I used a needle that I cut the tip off of and soldered to my wiring.

I was determined to have my probe THAT DAY, darnit, and nothing was standing in my way. I simply couldn't wait for a mail delivery. And I couldn't stomach paying somebody so much for what is worth so little.

I even added my own LED to it as a power check. Take that, CK3!
