I have a Dazzle DVC 100 and it sucks playing in SD because I own a HDTV. So I was looking around ebay and found these items that might work for a setup to play in HDMI and record in SD.
I think you might have issues with the resolution; the output to the laptop has to be 640x480; and you want the TV output to be HD. Since both come from the same HDMI output on the PS3, I think this will be a problem. Plus, there is the issue of recording quality...you could probably get better quality using an HD camcorder pointed at the HD TV.
The PS3 has HDCP protected output; so it is illigal to record it or to make a device that can record it. However, a few companies that make high-end gear have been able to get around this, by showing that some companies need such recorders to do business effectivly (like the people that make video game trailers).

Isn't there some sort of program or doohicky, something-or-other that strips HDCP protection?
SOB...the old version would...that was it's only feature over the otherwise superior units that cost half as much. If you can get your hands on the old 720P-only model, I believe it will record HDCP, as I heard about it from someone using it to make HD videos of his PS3 play for youtube.
There used to be a few HDMI-HDCP capture cards, but these were all outlawed by the DMCA. I went through this whole mess myself when I was trying to use a PC to record HD cable...this device was the only "legal" unit I could find. Today, there are ways to use a cablecard with a non-OEM system to record HD cable...but there was no way to do it last year without one of these semi-legal recorders.
There are ways around HDCP, but it is illigal just to discuss them...so talk about these things on another forum, and use a anonymous proxy to do it.
