You can but you would have to have Linux installed.

This only works on PS3 Phats that allow Other Systems to be installed. The Slim line does not allow Other Systems.

Im not sure PokerStars will have a Linux installer...I know Full Tilt doesn't.
You could run through WINE, but it didn't go too well when I was trying to get Full Tilt working through a Debian install.
