2nd Xbox 360 for Homebrew

Short background story (you can skip if you want):
I recently had my Xbox 360 Red Ring on me, so I sent it off to Microsoft to get it repaired. In the downtime, I decided to buy a new Xbox 360. The old one was an old 20GB drive model, so I bought a new Arcade and an using the 20Gb drive on it. So I just got the old 360 back and thought it might be cool to use it for homebrew or playing backups offline.
Skipping the story:
I have a older, memory card-less, hard drive-less 360 that is a 2nd system. I want to use it for homebrew and playing backup games offline. It won't ever be connected to the internet as where it is going does not have WiFi or the ability to run an ethernet cable. What is the best way to go about this? I am pretty sure it has the latest Dashboard and firmware, so that may hinder some things, but I would like to soft-mod as much as possible. I am not so good at soldering and don't have much $$$ for a mod-chip (especially if I have to get a drive to make backups, blank DVD-R DLs, and a hard drive or memory card.)
Let me know what my options are for this system. I am not worried about banning since it will be offline period.

check what drive (this will let you no the process nearly all done via software)it is, then the easiest way i see is to flash the drive and play backups get your iso's off the www done! there are many places that will tell you how to do it.

Is there any way to play homebrew (like MAME360) without a modchip on updated consoles?
I know that older dashboards could be JTAG-ed (at least from what I read) but being up to date throws a monkey wrench in those instructions.
And though I have read what the JTAG is, I still don't understand it completely and what it does and how it allows homebrew.

You will not be able to JTAG either boxes as they are more than likely the 8xxx series dash. JTAG allows you to run code unsigned by M$. This allows people to make their own games & software for the xbox (in comes homebrew).

I finally powered up the box to get the dashboard version and cracked it open to get the drive model and this is what I found:
Xbox Dashboard : 2.0.8498.0
Drive Model: DG-16D2S-09C
Drive Date: October, 2009
Drive Firmware: 93450C
I started looking at that drive and flashing and saw stuff about soldering and lost hope. I am terrible at soldering and don't really know anyone that is good, so hopefully things have happened since those guides so I can flash without soldering.
Looks like I am out of luck for a JTAG too since I have the 8000 series dashboard. Crap. Maybe someday.

The 360's do not come with code unsigned by microsoft. If you have an older xbox that was not updated last summer, or a newer one that hasnt been updated by the internet you can modify the box to play games that are not assigned to any specific box. Basically by "unsigned" it means that the box wont check to see if the content you are trying to play has a valid signature. (aka - you bought it through LIVE on that box)

After looking at documentation, videos, and guides, I decided I would rather have someone else do it or trade the system for an already flashed + JTAG system (with hopefully a BenQ drive.) This is just too much crap to go through to play a simple backup.
I soft-modded my original Xbox with nDure, flashed custom firmware (M-33) on my PSP, run FreeMcBoot on my PS2, soft-modded the Wii with BannerBomb and HackMii, even region-free hacked all the DVD players in the house, but when it comes to cutting traces and soldering and using special equipment (CK3 Pro or whatever it was), count me out.
Sorry for the trouble.

Eh, don't worry about. I think it's fairly unlikely for another method to be discovered, but if there is, I'm sure we'll all embrace it with open arms. Which reminds me, I think my 360 is moddable...
