Can you play backups on a banned xbox360 ? Noob question, I know. I'm just not familiar with the console.

Some games come with updates on the disk. You can install those. You can also update the dashboard through these updates.
You will be able to play games with updates on the disk. Without Xbox Live, I do believe you are stuck with version 1.0 as you put it.
However, I do believe you can put the hard drive in another console, update it, and put it back into the banned 360 and have the update. I remember needing to do this with Resident evil 5 , so I could play over LAN. Since the other console had a newer update for the game, the banned xbox wouldn't connect with it, until it was updated.
This doesn't work with downloadable content though, however.

You can download Title Updates off the internet to put on to your 360 HDD. You can use programs like Xplorer360 to view your HDD after you have connected it to your PC. Will require an adapter or disassembly of the HDD case.
