Are these videos from a video camera, DVD movies or something else?

If the videos in question are not encypted, you don't need Xcopy to copy them, any standard burning software will be able to do the job for you. Xcopy is a quirky program.

Like I said before, Xcopy is a temperamental program and that may be why some work and some don't. Another possibility is that the media you're using is low quality. Switching to high quality media such as Ritek G04, Verbatim Metal AZO or Taiyo Yuden often help burn quality and consistency.

You would do well to look into DVD Shrink and DVD Decrypter both of which are free and very good. DVD Shrink handles episodic DVDs quite well.
