Cant get better than 480p with PS3

My tv is a 48"Mitsubishi HDTV (WS-48313)
I'm using component and HDMI to DVI cable. The game says it will support 720p and the info on my tv also says it will support 720p, but the best that i'm getting is 480p.
When the PS3 is at the main menu screen it says 1080i but when I load a game the screen scrambles and goes down to 480p. I've went into the display settings and made sure everything was set up correctly, I don't know what else to do. Any help?

I know it does that with ps2 games, but i haven't encountered that on ps3 games, which game is it?

NHL 2k7 and Resistance. I finally figured out my TV will not make 720p. Only 480i/480p/1080i. I read in my manual that a 720p picture will be defaulted to 480p.
