PS3 harddrive?

Once I buy the system am I stuck with that hardrive for the entire time I have it?
Or could I take say, a lab top hardrive and put that in?

You can use 2.5" SATA laptop drives. Sony actually has instructions on how to do this included in the owners manual when you buy it. It's pretty easy, you take a panel off of the bottom and then take out a few screws. Pull out the old drive, toss in the new one, done.
