as a true testament to my impatience, I just went ahead and bought it.... Fujitsu 320gb 2.5" hdd, sata 3.0, 7200rpm, 16mb cache.... also got a 16gb usb flash drive for the backup.
You'll be fine with that one.
I personally would have went for a 5400rpm drive, I have heard some people have trouble with the 7200rpm drive due to the extra heat generated from the faster drives.

I have read in a few places that the 7200rpm runs slightly hotter, but my game room is pretty much a freezer (A/C cranked during the summer, windows open during the winter), so I doubt I'll have any heat issues... Does the speed/cache improve the performance at all?

It does make a slight difference, like .2 seconds on loads. The only time it would be noticeable would be on game installs.
I know there was a site that tested the 5400rpm drives vs their 7200rpm counterparts, its been awhile since I've seen it though.
I have a 250GB drive that runs at 7200rpm and I have never had an issue with overheating. My room is not exactly cold either, so you sould be fine. However, I ould recommend getting a 5400rpm model if you can, just to be sure.
