Is it possible to back up ps3 games to HD or disc and still be able to play online with them? I don't want to do anything to the PS3 itself i.e. jailbreak, Homebrew etc.
If you do not want to modify the console then the answer is no.
If you do jailbreak it you lose psn access, including online gaming since you need to be signed into psn first. You can however play online with friends using xlink kai or similar, but not on official game servers.

No, you can't. For homebrew or mods you need to be on firmware 3.55 and then use one of the custom 3.55 firmwares, for accessing PSN you need the latest firmware.
